I think I’m in love with ginger root! Aside from the spicy citrusy flavor, ginger has many health benefits. From stimulating circulation, to helping with digestion, including fresh ginger in your diet is one health food that won’t be hard to stomach. Try the recipe below for a quick dinner that can be prepared ahead of time and cooked later.
What You Will Need:
2 T. Peanut Oil (a really great oil for when you are using high heat)
1 Pound of Boneless Chicken, cut into bite sized pieces, set aside
1 Stalk Celery, chopped
1 Stalk Broccoli, divided into florets
1 Small Onion, roughly chopped (just means big pieces)
1 Bell Pepper, roughly chopped (I used 1/2 of one color and 1/2 of another because that’s what I had on hand)
For the Sauce You Will Need:
1/4 tsp. Garlic Powder (not garlic salt)
1/2 C. Rice Vinegar (in the ethnic food aisle usually)
1/2 C. Orange Juice
1/4 C. Bragg’s Amino Acids or Gluten Free Tamari Sauce (if you have yet to try Bragg’s Amino Acids please allow me to encourage you to do so. It tastes nearly identical to soy sauce but is gluten free- unlike soy sauce – and has many health benefits)
2 T. Fresh Grated Ginger
1/3 C. Granulated Sugar
2 tsp. Toasted Sesame Oil
2 T. Cornstarch
Mix together all of the sauce ingredients and allow to sit.
Meanwhile, chop up your veggies.
If you have not done so yet, cut the chicken into bite sized pieces.
Over high heat in a wok or really big pan, heat the peanut oil and add the chicken pieces. Cook until no longer pink.
Add the veggies and stir, cooking for about two minutes or until the broccoli turns a bright green. Do not overcook or you’ll get mushy or burned veggies.
Add the sauce you have already made and set aside, stirring to coat the chicken and veggies. Cook for 1-2 minutes more or until the mixture begins to thicken.
Serve immediately over steamed rice or rice noodles. I didn’t have sushi rice but I did have purple sticky rice (so much fun if you are a kid!).
