Gluten Free Shredded BBQ Pork

As good, maybe better, than the sauce at your favorite smokestack hangout, this takes BBQ to the next level!

Here’s What You Will Need:

3 Pound Boneless Pork Butt (Don’t worry.  It’s actually the shoulder of the pig.)

2 Cans of Tomato Sauce (15 ounces)

2 C. Honey

2 tsp. Garlic Powder

4 tsp. Onion Powder

1/2 tsp. Allspice

1/2 tsp. Cloves

1 tsp. Salt

1/2 C. Molasses

2 T. Apple Cider Vinegar

Place the pork (not the sauce ingredients) in a crockpot or other slow cooker and cook on low until it easily falls apart (about 6-8 hours).

When the pork is nearly finished cooking, begin work on the BBQ sauce which will take about 30 minutes to prepare.

In a saucepan whisk together all of the sauce ingredients.  Bring the mixture to a boil and them immediately lower the temperature slightly and simmer.

Continue to simmer uncovered for 20 minutes, whisking occasionally.  The sauce will begin to boil down, thicken, and darken in color.

Carefully drain all of the liquid off of the meat and return it to the slow cooker.  Shred the pork using tongs or forks.

Pour the desired amount of sauce over the shredded meat, stir to combine, and continue to cook covered for an additional 30 minutes or until you are ready to eat.  Serve on your favorite gluten free hamburger buns (Udi is  my personal favorite).

Should you choose not to use all of the sauce, it stores easily in the refrigerator to use for a later meal.
