Goat Cheese & Ham Quiche

You can use swiss or jarlsberg instead of goat or sheep cheese to make this yummy dinner! I use a lot of sheep or goat cheese because hubby can’t tolerate regular milk or milk products well. Did you know that 60% of people who react poorly to cow’s milk products do just dandy on sheep or goat’s milk products? Interesting.

Gluten Free and Off The Beaten Path

Adults and kids alike will scarf down this gluten free quiche.  Made with mild cheeses, and a delicious Old Fashioned Piecrust, all you’ll need is a tossed salad and dinner is served!

Here’s What You Will Need for the Crust:

This makes TWO crusts

Using your food processor and dough attachment, add the following three ingredients:

3 C. Superfine Rice Flour (Brown, White, or a combination)

1 tsp. Guar or Xanthan Gum

1 tsp. Salt

Pulse in the food processor for a few seconds to mix.

1 Stick of Chilled Butter

2 Eggs

4 Ounces of Chilled Cream Cheese

Slice the butter into the food processor and pulse until mixture is crumbly.  Add the eggs and the cream cheese pulsing again for a few seconds until mixed.

6-8 T. Half and Half or Cream
