Old Fashioned Date Bars

Even if you don’t like dates, these will make you a convert.  Tested on a combative and highly opinionated teen, they passed with flying colors and like magic…they disappeared!

Here’s What You’ll Need:

For the Crust

1 Stick of Butter

1/4 C. Packed Brown Sugar

1 C. Superfine Rice Flour (I used brown rice this go around)

1/4 C. Tapioca Starch

1/4 tsp. Guar Gum

1/2 tsp. Cinnamon

1/3 C. Chopped Walnuts

Preheat the oven to 325 degrees and grease a 9 x 6 casserole dish.

Combine all of the above ingredients and press the mixture into the bottom of the prepared dish.  Bake for 20 minutes.IMG_2835

   meanwhile…

Beat together 2 egg whites until stiff.

Add the Following to the Egg Whites:

1 1/4 C. Packed Brown Sugar

1/8 tsp. Salt

1/2 tsp. Baking Powder

2 T. Superfine Rice Flour

2 tsp. Vanilla Extract

1 C. Dates, chopped

Mix together gently until all of the ingredients are thoroughly combined.

Once the crust has finished baking, remove from the oven and pour the egg white mixture over the hot crust and return to the oven and bake for an additional 35-40 minutes or until golden brown on top.

Allow the bars to cool before slicing and serving.
