Maple Pumpkin Bread

Just in time for the holidays! This quick bread is easy to mix up and makes the house smell like Christmas.

Here’s What You Will Need:

1 3/4 C. Superfine Rice Flour (Brown or White)

1/2 C. Granulated Sugar

1 tsp. Baking Soda

3/4 tsp. Salt

1 tsp. Baking Powder

1/4 Xanthan or Guar Gum

1/4 tsp. Cardamom

1/2 tsp. Allspice

1 tsp. Cinnamon

1 C. Puréed Pumpkin

1/3 C. Water

2 Eggs

1/4 C. Vegetable Oil

1/3. C. Pure Maple Syrup (no fake stuff…)

1/2 C. Semi-Sweet Chocolate Chips, optional

Preheat the oven to 350 degrees and lightly grease a bread pan.

In a large bowl stir together all of the dry ingredients except the chocolate chips.


Make a well in the center and add the oil, water, and eggs.  Whisk until combined.

Mix in the pumpkin and maple syrup.  Stir in the chocolate chips.


Pour the batter into a prepared pan and bake for 45 minutes or until a butter knife inserted comes out clean.

Allow the bread to cool before slicing and devouring.  I’d show you a picture of it sliced but every time I’ve made it there are only crumbs by the time I return with the camera.
