Lemon Poppy Seed Bread

Here’s an old fashioned recipe with a gluten free makeover!

Here’s What You Will Need:

1/3 C. Vegetable Oil

1 C. Granulated Sugar

2 Eggs

1/2 C. Milk

1 tsp. Baking Powder

1/4 tsp. Salt

1/4 tsp. Xanthan or Guar Gum

1/2 tsp. Dried Lemon Peel (optional)

1 tsp. Poppy Seeds

2 C. Superfine Rice Flour (Brown or White)

5 T. Lemon Juice (that’s a tablespoon + two teaspoons)

Preheat the oven to 350 degrees and lightly grease a bread pan.

Combine all of the dry ingredients into a large mixing bowl. Β Add the wet ingredients and mix by hand or using an electric mixer just until all of the ingredients are blendedΒ together.

Pour batter into a prepared pan and bake for 50-60 minutes or until a knife inserted comes out clean.

Allow to cool before slicing.
