Old Fashioned Potato Salad

A perfect summer recipe, this potato salad is easy to whip up. Because this dish is even better the next day, save time with tomorrow’s dinner by making this salad the day before.

Here’s What You Will Need:

5 Medium Potatoes, peeled and cut into large bite sized pieces

1/4 C. Fresh Parsley, chopped

3 Hard Boiled Eggs, chopped

1 Stalk Celery, chopped

1/2 tsp. Dillweed

1 T. Apple Cider Vinegar

1/4 tsp. Paprika

Cracked Pepper, to taste

1 C. Mayonnaise

5 Strips Thick Cut Bacon, cooked crisp and  broken into pieces

Place the potatoes in a large pot, cover with water, and boil just until able to pierce with a fork.  Do not overcook or the salad will become mush when you begin to mix all of the ingredients together.

Once cooked, immediately drain the potatoes and run cool water over them.

In a large bowl, mix together all of the ingredients, cover and refrigerate until ready to serve. Simply yummy!
