Gluten Free Peanut Butter Cookies

Either as a lunch time treat or as an after school snack, these peanut butter cookies fit the bill!

Heres’s What You Will Need:

1/2 C. Granulated Sugar

1/2 C. Packed Brown Sugar

1 Egg

1/2 C. Peanut Butter

1/2 C. Butter, softened

1 tsp. Vanilla Extract

1 1/4 C. Superfine Rice Flour (brown rice or white rice)

1 tsp. Baking Soda

1/4 tsp. Salt

1/4 tsp. Guar or Xanthan Gum

5 Ounces or About 1/2 Package of Chocolate Chips, optional

1/2 C. Granulated Sugar, reserved

Preheat the oven to 375 degrees and either lightly grease cookie sheets or line with parchment paper.

Cream together the butters, sugars, and egg.  Add the remaining ingredients and mix just until combined.  Stir in the chocolate chips, if desired.

          *This time around I tried peanut butter with coconut oil (see pic below) and they turned out just lovely!


When ready to bake, roll equally sized balls of dough (so they bake evenly) and coat in the reserved sugar.  Place the dough on the prepared cookie sheets – about 12 cookies per sheet – and make a crisscross pattern using a fork.

Bake the cookies for 8-10 minutes.  Allow to cool before transferring to a plate, a cookie jar, or your tummy!
