Simply Delicious Baked Chicken

Sometimes less really is more.  This super fast recipe with just a few spices is packed with flavor and easy on time.

Here’s What You Will Need:

2 Split Chicken Breasts – Bone In (do not pierce or cut the meat)

1 tsp. Poultry Seasoning

2 tsp. Salt

10 Turns of Cracked Pepper

1 tsp. Dried Parsley

1 T. Olive Oil, reserved

Time Saver Tip:  Purchase a meat thermometer.  This will save you precious time by babysitting your chicken (or other meat) for you and prevent you from cutting into the meat to see if it’s cooked through.  Some ovens have probe meat thermometers which are particularly handy as the oven will alert you when the desired internal temperature of the meat is reached.

Preheat the oven to 350 degrees and lightly grease a large casserole dish.

In a small bowl, mix together all of the spices.  Because you will season both sides of each split chicken breast, this will save you time and several hand washings.  Trust me, you will thank me later.

Place the chicken breasts evenly in the prepared casserole dish and sprinkle both sides evenly with the spice mixture.

Drizzle the olive oil over each chicken breast, cover with foil, and bake in a preheated oven until the internal temperature reaches 150 degrees (not quite cooked through yet).

Uncover, and continue cooking at 350 degrees until the internal temperature of the chicken reaches 165 degrees and the skin crisps up.  Do not overcook the chicken or it will be dry.

Allow the chicken breasts to rest for 10 minutes before serving with your favorite veg.
