Gluten Free Peanut Butter Rice

This protein packed side dish will have the kids and husbands coming back for seconds!

Here’s What You Will Need:

1 T. Olive Oil (vegetable or peanut oil will work too)

2 C. Uncooked Jasmine Rice

3 T. Bragg’s Liquid Aminos (tastes like soy sauce but is wheat free and low in sodium)

2 T. Rice Vinegar

1/4 tsp. Granulated Garlic

1/2 tsp. Ground Ginger

2 T. Peanut Butter


Shelled Roasted Peanuts, chopped for garnish

In a medium sized pan, begin toasting the uncooked rice in the olive oil, until fragrant – 3 to 5 minutes.  Stir occasionally.


Meanwhile, as the rice is toasting, begin mixing up the cooking sauce.  In a 4 cup measuring bowl, add the Bragg’s Liquid Aminos, vinegar, garlic, ginger, and peanut butter.  Fill with water up to the four cup mark and whisk to combine.

Once the rice is toasted, add the liquid continuing to cook on medium heat and stirring as needed until the liquid is fully absorbed.

If desired, garnish with chopped peanuts and enjoy immediately!
