Sweet Spaghetti Squash

People usually think of a salty recipe when mentioning spaghetti squash but this handsome vegetable can be prepared a number of ways.  This recipe uses cinnamon and brown sugar, giving it whole new taste.  Sweet!

Here’s What You Will Need:

1 Large Spaghetti Squash, rinsed and split lengthwise, and seeds removed

3 T. Butter

1/3 C. Packed Brown Sugar

1/2 tsp. Cinnamon

1/4 tsp. Salt

Pinch of Nutmeg

Preheat the oven to 350 degrees and lightly grease a cookie sheet or line with parchment paper.

Place the squash split side down on the prepared cookie sheet and bake for 40 minutes.

Cool slightly until able to handle and scrape out the flesh of the squash, using a fork, into a medium sized bowl.

Impatience won out and so I used a pot holder to handle this hot veggie.

Add the remaining ingredients and toss until combined.  I ran out of brown sugar so I improvised by making my own with regular granulated sugar and molasses.
