Sugar Snap Peas with Ginger & Pear

For a fast vegetable – from pan to table – in about ten minutes, try this sugar snap pea recipe.  Packed with nutrition, this easy side is low on fat and full of fresh flavors.

Here’s What You Will Need:

  • 1/2 Pound of Fresh Sugar Snap Peas
  • 1 T. Freshly Grated Ginger Root
  • 1 Ripe Pear (I used a Bosc pear this time around)
  • 1 tsp. Vegetable Oil
  • 1/4-1/2 tsp. Salt, to taste

In a medium sized sauté pan over medium-low heat add the oil, sugar snap peas and ginger, tossing to coat.  They may pop and sizzle a bit so use extra caution.  Make sure the heat isn’t too high or the ginger will burn.

Meanwhile…as the peas are cooking and you are giving them the occasional stir, peel, core, and cube the pear making large bite-sized pieces.  If the pieces are too small they will become mushy.

Add the pears to the sauté pan, stir, and continue cooking for approximately 2 more minutes or until the pears brown slightly (as shown in the picture).  Season with salt and serve!
