Gluten Free Baked Chicken Nuggets

Here’s a healthier and gluten free version of chicken nuggets.  We eliminate extra fat by baking these, but we use Chex cereal to add crunch.  Add a few dipping sauces (easy recipes follow) and a vegetable and you’ve got a dinner the kids may actually fight over.

Here’s What You Will Need:

2 Pounds Boneless, Skinless Chicken Breast – cut into nugget sized pieces

1 C. Gluten Free Breadcrumbs (see the Money Saver Tip below)

3 C. Rice or Corn Chex Cereal

1 tsp. Celery Salt

5 Turns Black Pepper

1/2 tsp. Poultry Seasoning

1/2 tsp. Paprika

2 Egg Whites

1/4 C. Mayonnaise

Extra Salt, to taste

Gluten Free Cooking Spray (like the Original Pay Spray)

Money Saver Tip:  While there are gluten free breadcrumbs at the supermarket, you can save money by making your own.  Collect the heels or stale pieces in a bag that you keep in the freezer.  When ready to use, simply thaw out and pulse in the food processor for about 30 seconds (like in the pictures below) and you just saved $5.00.

Preheat the oven to 375 degrees.  Lightly grease two cookie sheets.

In a food processor, pulse the cereal, breadcrumbs, and spices.  Pour into a shallow pan.

Beat the egg whites in the mixer until they begin to hold their shape.  They don’t need to be stiff.


In a separate shallow pan gently combine the mayo with the egg whites.


I salt the chicken before I coat it with the egg and breadcrumb mixture, but this is optional.

Place all of the nuggets in the egg mixture and thoroughly coat.


Now you can lay each eggy nugget on top of the breadcrumb mixture.  Give the pan a shake to cover each side with the breading.

I use tongs to lay each nugget out evenly on the cookie sheets and then give them a once over spray of gluten free cooking spray.

Bake for 20-25 minutes or until cooked through.  Serve with dipping sauces (suggestions below).


Spicy BBQ Dip:

1/2 C. Gluten Free BBQ Sauce (like KC Masterpiece) + 1 T. Siracha Chili Sauce, mix well.


Honey Mustard Dip:

1 T. Mustard + 1/3 C. Honey, mix well
