Fresh Green Beans with Pearl Onions & Thyme

I love fresh green beans, and by making this quick recipe you can benefit from all of the vitamins without all of the sodium found in canned beans.

What You Will Need:

1 Pound Fresh Green Beans, rinsed, patted dry, and the ends snapped off

1 C. Frozen Pearl Onions, thawed

1 T. Olive Oil

Sprig or Two of Fresh Thyme

1 T. Butter, reserved (optional)

Salt and Pepper, to taste

Warm the oil in a large pan over medium heat and add the beans, tossing to coat with oil and cooking until bright green – about 3-4 minutes. Β Careful, the oil may pop from the water content in the beans.

Add the pearl onions and the thyme (either the leaves themselves or the full sprig) and continue to cook and toss as needed until lightly caramelized – about 2-3 more minutes.


Salt and pepper according to your preference. Β Add the butter (if you wish) and toss to coat. Β If you used the full sprig of thyme, remove and discard it.
