Jammin’ Apricot & Herb Chicken

Preheat oven to 350 degrees.

What You Will Need:

1 Whole Chicken (3-4 pounds), cut into pieces

2 T. Olive Oil

1/2 Medium Onion, sliced into rings

2 Whole Cloves Garlic, peeled

Salt

Cracked Pepper

1/2 tsp. Poultry Seasoning

1/4 tsp. Thyme

1/2 C. Apricot Preserves

Place chicken pieces in a large dutch oven, coat evenly with olive oil, and liberally salt and pepper.

OIMG_3773ver medium/high heat, brown the chicken pieces on both sides – no need to cook through.  Remove from heat.

Sprinkle the chicken with poultry seasoning, thyme, onion rings, and garlic (pictured above).  Heat preserves in the microwave until melted – about one minute – and pour evenly over the chicken.

Cover and bake in preheated oven for one hour.  Allow the chicken to rest for about 10 minutes before serving.  We had ours with mashers and sautéed green beans.
